Carrot Cake Recipe

Carrot Cake

2 cups flour
2 cups sugar
2 teasp. baking soda
2 teasp. cinnamon
1 teasp. salt
3 cups grated carrots
4 eggs
1 teasp. vanilla extract
1 1/2 cup vegetable oil
Sift dry ingredients into a mixing bowl.
Mix in grated carrots, vanilla, eggs.
Beat, and add oil slowly.
Pour into a buttered 8"x12" pan, or two 8" diameter round pans.
Bake at 325 degrees for 35-45 minutes or until the center is done.
Let cool.

Frosting
8 oz. cream cheese
1 stick butter
1 tablespoon vanilla extract
1 lb. powdered sugar

Beat cream cheese, adding butter, and vanilla.
Add powdered sugar in thirds, beating.
Frost cake

Lemon Bars


Crust:
1/2  lb butter melted (2 cubes)
1/2 cup powder sugar
2 cups flour

Mix together and press dough on cookie sheet making sure to make an edge all around the cookie sheet you can use your hands and fingers to press dough and rolling pin 
Bake at 350 for 15-20 min or until golden brown

Filling:
1 cup lemon juice
lemon zest
4 eggs
3 cups sugar
2 tsp baking powder

Beat filling with mixer until it looks frothy pour into hot baked crust and cook for 35-45 min. or until not giggly

Chocolate M&M Cookie Recipe


2 cubes of softened butter

1 cup white sugar
1 cup brown sugar


Mix together until creamy

Add:
2 eggs
1 tsp vanilla
mix together

Add:
1 cup cocoa
 2 1/4 cups white flour 
1 tsp salt
1 tsp baking soda
mix together

Add: 
1 cup mini M&M's

I use a small ice cream scoop to place cookie dough on cookie sheet then I press the balls of cookie dough with the palm of my hand to flatten just slightly and sprinkle the mini M&M's on the top of the cookie dough rounds 

Bake at 350 for about 16-18 min or when they look and smell done....enjoy!

Apple Pie


Apple Pie

Basic Pie Crust

2 1/2 cups Flour
1 tsp Salt
1 TBL Sugar
6-8 TBL Ice water
1/2 cup Cold Butter

In a mixing bowl mix together flour, sugar and salt  cut In butter with butter knives, fork or fingers till pieces are the size of small peas.

Sprinkle cold water over the mixture; gently toss with a fork or fingers until all mixture is moistened. Form dough into a bal wrap in plastic wrap and chill in fridge about 20-40 minutes 

On a lightly floured surface, flatten dough with hands. Roll dough from center to edges, forming a circle about 12 inches in diameter. Wrap pastry around rolling pin or just handle it gently and place onto a 9-inch pie pan.
Trim pastry to ½ inch beyond edge of pie pan fold under the extra pastry to build up the edge.

This recipe makes 2 pies crusts 

Apple Pie Filling

8 cups sliced, peeled assorted baking apples - about 3 lbs.  (Granny Smith, Cortland, Jonathan)
2 Tablespoons lemon juice
1/4 cup apple juice
1 cup white sugar
1 cup brown sugar
1/4 cup all-purpose flour or tapioca flour
1 Tablespoon ground cinnamon
1 teaspoon Vanilla
2 Tablespoons butter 

Directions:

1. In a large bowl, toss the sliced apples with lemon, vanilla and apple juice.
2. Combine sugars, flour, cinnamon add to apples and toss well to coat.
3. Fill pastry pie pan with apple mixture. Dot with butter.
4. Place second crust on top of pie filling, cut slits in top of crust to vent. Seal the edges of the crust with a fork or by hand.
5. In a small bowl, beat an egg and splash of milk. Brush mixture over top crust then sprinkle with cinnamon.
7. Bake at 400 degrees F and bake 40-45 minutes more or until crust is golden and filling is bubbly.
